Ingredients
- 1 large cucumber, chopped (and peeled if desired)
- 1 large tomato, chopped
- 1 medium Vidalia onion, chopped
- 8 - 10 fresh basil leaves, chopped
- 1/4 cup balsamic vinegar
- 2 teaspoons olive oil
- Salt and pepper to taste

Step 1:
Combine cucumber, onion, tomato, and basil in large bowl. Add salt & pepper and mix well.

Combine oil and vinegar, pour over vegetables, and toss to combine. Serve cold.
