Ingredients
- 3 eggs, beaten
- 1 cup vegetable oil
- 1 tablespoon vanilla
- 2 1/4 cups sugar
- 2 cups shredded zucchini
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 tablespoon cinnamon
- 2 cups chopped strawberries
- 1 cup chopped pecans
Directions

Step 1:
Preheat oven to 350º. Lightly grease 5 mini loaf pans.

In a large bowl beat together eggs, oil, vanilla, and sugar.

Fold in zucchini, then stir in flour, salt, baking powder, soda, and cinnamon.

Fold in strawberries and pecans. Fill loaf pans 3/4 full.

Bake for 50 minutes. Cool before removing from pans.
