Squash Casserole

Ingredients

  • 2 lbs yellow squash, cut into ½” half moons
  • 1 medium onion, cut into thinly sliced half moons
  • 3 cups grated sharp cheddar cheese
  • ½ stick butter
  • ½ cup whole milk
  • 2 eggs
  • 32 Ritz crackers, crushed into crumbs
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 full tube Ritz crackers crushed into crumbs, for topping

Directions

  • Step 1:

    Preheat oven to 350 F. Lightly butter a 3 qt baking dish.

  • Step 2:

    In a large pot, boil cut up squash and onion, in enough water to cover squash for 3 minutes (you may boil 2 – 5 minutes longer if you want softer squash in your casserole).

  • Step 3:

    Drain squash and onion and place in large mixing bowl.

  • Step 4:

    Add shredded cheese and butter while the squash and onions are still hot. Mix till melted.

  • Step 5:

    Add milk and beaten eggs and mix thoroughly.

  • Step 6:

    Add the 32 crushed Ritz crackers and stir in.

  • Step 7:

    Add salt and pepper and stir.

  • Step 8:

    Place mixture in lightly greased 3 qt casserole dish and top with full tube of crushed Ritz crackers.

  • Step 9:

    Bake for 45 min to 1 hour, until brown and bubbly.
