Ingredients
- 1 pie crust
- 3 medium sized tomatoes
- ½ tsp salt
- 6 large fresh basil leaves, chopped (or 2 tsp dried)
- 1 ½ cups shredded cheddar cheese
- 2 tsp balsamic vinegar
- ¼ tsp black pepper
- ½ to ¾ cup mayonnaise

Step 1:
Preheat oven to 350oF

Step 2:
Bake pie crust for approximately 10 minutes until baked, but not browned.

Step 3:
While crust is baking, cut tomatoes (vertically) into ¼ inch slices. Remove seeds, place in a colander and sprinkle with ½ tsp salt. Allow to drain for at least 10 minutes. Pat dry with a paper towel.

Step 4:
Arrange ½ of the tomato slices in the baked pie crust. Top with ½ of the basil, ½ of the cheese, ½ of the balsamic vinegar, and ½ half of the black pepper.

Step 5:
Repeat.

Step 6:
Spread mayonnaise over the top of the pie.

Step 7:
Bake for 30 minutes, until lightly browned.
