Peach and Blueberry Trifle

Ingredients

  • 1 package (5.1 ounce) instant vanilla pudding
  • 3/4 cup apple juice or dry sherry
  • 3 cups sliced Georgia peaches
  • 1 cup Georgia Blueberries
  • Half a pound cake (store bought works well), cut 1 inch squares
  • 1/2 pint heavy whipping cream
  • 2 tablespoons sugar
  • 1/4 teaspoon vanilla

Directions

  • Step 1:

    Prepare pudding according to package directions and chill. When pudding has chilled, stir apple juice or sherry into pudding and chill again.

  • Step 2:

    To prepare whipped cream, place sugar and vanilla into mixing bowl. Add the whipping cream and beat until mixture has firm peaks. Set aside.

  • Step 3:

    In a trifle bowl or large decorative bowl, layer half of the pudding, whipped cream, cake, and fruit.

  • Step 4:

    Repeat layers, saving enough pudding and whipped cream to top. Garnish with blueberries and peaches.

  • Step 5:

    Cover and refrigerate for several hours or overnight. Serves 10 - 12.
