Ingredients
- 3 cups fresh corn kernels (about 4 ears
- 2 green onions, thinly sliced
- 2 eggs
- ¾ cup 2% milk
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 ½ Tbsp sugar
- 1 tsp baking powder
- ½ tsp garlic powder
- 1 ½ tsp kosher salt
- Canola oil, for frying
- Parsley, green onion, sea salt, sour cream, garlic aioli for garnishing
Directions

Step 1:
Using a sharp knife, cut the kernels off the corn cobs. Place the kernels and the sliced green onion in a medium sized bowl stir to combine. Set aside.

In a small bowl, whisk together the eggs and milk. Set aside.

In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, garlic powder, and kosher salt.

Pour the egg-milk mixture into the dry ingredients and stir until combined and a thick batter is formed.

Fold in the corn kernel-green onion mixture.

Step 6:
Add enough canola oil to cover the bottom of a large, non-stick skillet and heat over medium heat.

When oil is ready, place about 1/3 cup batter in the pan and flatten slightly with the back side of the measuring cup.

Step 8:
Fry the fritters in batches that fit the skillet, about 2 to 3 minutes per side, until golden. Add more oil as needed.

Step 9:
Remove and place on a cooling rack or paper towel lined plate.

Step 10:
Top with parsley, sea salt, sour cream, garlic aioli, or green onion as desired.
