Ingredients
- 1/4 cup olive oil
- 1 teaspoon lemon zest plus 3 tablespoons juice
- 1 1/2 teaspoons kosher salt
- 1 cup uncooked orzo
- 1 cup frozen sugar snap peas
- 1/2 cup sliced cucumber
- 1/2 cup sliced yellow squash
- 1/2 cup sliced red onion
- 1/4 cup chopped parsley
- 2 tablespoons fresh chopped tarragon
- 1/4 cup chopped chives

Step 1:
Combine oil, lemon zest, juice and salt. Set aside.

Cook orzo according to package directions, cool.

Combine remaining ingredients and serve chilled.
