Vegetable Succotash

Ingredients

  • 4 ears fresh corn
  • 1 cup chopped Vidalia onion
  • 1 1/2 cups fresh or frozen lima beans
  • 1/2 cup each chopped red and orange peppers
  • 1/4 - 1/2 cup olive oil
  • 1 tablespoon each minced garlic and basil
  • Salt and pepper to taste

Directions

  • Step 1:

    Preheat oven to 400ยบ.

  • Step 2:

    Remove corn from cob. In a bowl, mix corn with remaining vegetables. Combine oil, garlic, basil, salt, and pepper in separate bowl, then pour over vegetables and stir to coat.

  • Step 3:

    Place mixture in a shallow pan and bake for 20-30 minutes, stirring occasionally. Makes about 4 cups.
