Blueberry Corn Muffins

Ingredients

  • 1 cup all purpose flour
  • 3/4 cup corn meal
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups blueberries
  • 1 egg, beaten
  • 1/2 cup buttermilk
  • 1/2 cup butter, melted

Directions

  • Step 1:

    Preheat oven to 425ยบ. Grease muffin tin or line with papers.

  • Step 2:

    Mix first five ingredients in large bowl, then gently stir in blueberries.

  • Step 3:

    Add liquid mixture to flour mixture, and gently stir with wooden spoon until combined.

  • Step 4:

    Spoon into muffin tins until 2/3 full.

  • Step 5:

    Bake 20-30 minutes until tops are golden.
