Ingredients
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- Pinch salt
- 1 Tbsp honey
- 1 egg
- 1 cup + 2 Tbsp milk
- 2 ½ Tbsp butter, melted
- ½ tsp vanilla
- ½ cup sweet potato, cooked and mashed
- ½ cup crushed pineapple, drained
Directions

Step 1:
Preheat waffle iron.

Step 2:
In a large bowl, stir together flour, baking powder, cinnamon, nutmeg, and salt.

In a medium bowl, stir together honey, egg, milk, melted butter, and vanilla.

Add the wet ingredients to the dry and stir until just combined.

Step 5:
Add mashed sweet potato and pineapple. Fold into batter.

Brush waffle iron with vegetable oil (if needed. Read manufacturer’s instructions). Ladle batter into waffle iron and cook, according to manufacturer’s directions, until golden brown and crispy.

Optional toppings: fresh fruit, syrup, nuts, ice cream, cool whip, chocolate syrup, butter.
