Cornbread Muffins

Ingredients

  • 1 cup all purpose flour, sifted
  • 1 cup stone ground corn meal
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 cup heavy cream
  • 2 eggs, slightly beaten
  • 4 tablespoons butter, melted
  • 1 cup drained whole kernel corn (white or yellow)
  • 1/4 cup chopped pimento
  • 1/4 cup chopped jalapeño pepper(optional)

Directions

  • Step 1:

    Preheat oven to 375 degrees.

  • Step 2:

    Place muffin papers in muffin tin.

  • Step 3:

    In a large bowl combine flour, cornmeal, salt and garlic powder.

  • Step 4:

    In another bowl combine cream, eggs and butter.

  • Step 5:

    Combine wet ingredients into dry ingredients, do not over mix.

  • Step 6:

    Fold in corn, pimento and jalapeño if using. Batter will be very thick.

  • Step 7:

    Evenly spoon into muffin cups and bake 40-50 minutes or until slightly browned.

  • Step 8:

    Makes 12 muffins
